It was really a pleasure having you in Udine :) There are so many variations in the ingredients and in the process of cooking frico, the main differences being the crisp version (cheese only, no potatoes) and the soft one (cheese, potatoes, with or without onions). So I guess that "original" includes a lot of them. We'll see how my recipe ranks, compared with the delicious one served at La Valanghe ;) Yay! Another frico-addicted!

Sometimes they assume that an excuse for a certain behavior will be better accepted than the truth. This might be a terribly wrong assumption: I think that truth encourages understanding, sympathy and trust on both parts, and not everybody reacts the same way to a given situation (but most people seem to ignore this fact). In my way of thinking, honesty from the other person greatly motivates me to try walking in their shoes even in the worst cases.
